Pumpkin soup is a comforting bowl that feels decadent without feeling too heavy. Smooth, a bit sweet and wholesome, it makes for a light meal when you want to have something warm, easy and also filling.
2 cups pumpkin (peeled and chopped) 1 small onion (chopped) 2 cloves garlic (chopped) 1 tbsp olive oil or butter 2 cups vegetable stock or water ½ tsp black pepper Salt to taste 2 tbsp cream or coconut milk (optional) Pumpkin seeds for garnish (optional)
Peel and chop the pumpkin into small, even cubes. Chop the onion and garlic finely so that they cook quickly and mix smoothly into the soup later.
In a pan, heat oil or butter and add onion and garlic to it and sauté until it turns soft and a bit golden.
To this, now add pumpkin cubes to it and stir for a minute. Now, pour in vegetable stock or water, cover and cook it until the pumpkin turns soft and tender.
Let the mixture cool down a bit, then blend to make a smooth puree of it.
Place the soup in the pan, add salt and pepper, and simmer for a short time. Adjust the thickness with water if required or stock, depending on how light or thick you like.
Add a swirl of cream or coconut milk from the top if required, garnish with some pumpkin seeds, and serve warm.
