The monsoon has arrived in most parts of India, and the temperature has decreased. With gusty winds and thunderstorms adding to the cold weather, your body craves something hot that would also boost your immunity. Try this pumpkin soup recipe.
1 cup water 1.2 kg pumpkin Salt, and pepper to taste 2 garlic cloves 1 tbsp oil 3 cups vegetable broth 1 onion 1 tbsp fresh cream
Dice the pumpkin into large chunks and keep everything ready.
Heat a pan and add oil to it. Saute garlic and add pumpkin and onion to it.
Add water and vegetable broth to the pan and let everything come to a boil.
When the pumpkin has softened, blitz the ingredients with a hand blender.
Season the blend with salt and pepper. Turn off the heat after it comes to a boil.
Garnish the soup with fresh cream and enjoy.
