The inherent sweetness of the orange pumpkin is a great seasonal ingredient to used in baked confections such as the pumpkin cake. Top it up with a simple sugar glaze or cream cheese frosting and enjoy a slice as a delicious accompaniment to an evening cup of tea or as dessert after a meal.
1 + ¾ cups all-purpose flour 2 teaspoons cinnamon powder ¼ teaspoon clove powder ¼ teaspoon nutmeg powder ¼ teaspoon ginger powder 1.5 cups cooked pumpkin ¼ cup orange juice 1 teaspoon baking soda 2 eggs ½ cup sugar ¾ cup brown sugar ½ cup vegetable oil
Preheat the oven to 177°C while greasing a loaf pan with some butter and setting aside.
In a large mixing bowl, combine the dry ingredients while whisking the eggs and sugars together in a separate one.
Add the oil, cooked pumpkin and orange juice to the eggs and sugar mixture before tipping in the dry ingredients into the wet mix.
Fold everything gently using a spatula before transferring the batter to the greased loaf pan.
Bake for an hour and check for doneness by inserting a toothpick in the centre to ensure it comes out clean.
Cool completely before unmoulding; slice and serve as it is or with a layer of cream cheese frosting on top.
