½ cup coriander leaves ¾ cup mint leaves 1 cup rice 2 green chillies, garlic pods Salt to taste 1-inch ginger 1 tbsp lemon juice ⅓ cup grated coconut 1 cup mix vegetables 2 cups water 2 tbsp oil
Pressure cook the rice and keep it aside to cool off a bit.
Heat oil in a pan and saute green chillies, garlic, and vegetables.
Add salt and pepper.
Meanwhile, blend coriander, mint, ginger, and coriander.
Cook the green blend and add rice to it.
Toss the ingredients and serve with a drizzle of lemon juice.
