Ingredients

Basmati rice Fresh mint leaves Coriander leaves Green chillies Ginger Onion Whole spices (bay leaf, cloves, cinnamon, cardamom) Oil or ghee Salt

Step 1

Blend mint, coriander, chillies and ginger into a smooth paste.

Step 2

Sauté whole spices and onions in oil until soft.

Step 3

Add the green paste and cook briefly to remove rawness.

Step 4

Add soaked rice, water and salt, then cook until grains are tender and separate.

Step 5

Rest, fluff gently and pack once cooled.
