Pudina rice is valued for its fresh flavour and ability to stay aromatic even after a few hours, making it suitable for packed meals. Mint and spices provide taste without heaviness, while the rice remains fluffy and separate, holding texture well during travel.
Basmati rice Fresh mint leaves Coriander leaves Green chillies Ginger Onion Whole spices (bay leaf, cloves, cinnamon, cardamom) Oil or ghee Salt
Blend mint, coriander, chillies and ginger into a smooth paste.
Sauté whole spices and onions in oil until soft.
Add the green paste and cook briefly to remove rawness.
Add soaked rice, water and salt, then cook until grains are tender and separate.
Rest, fluff gently and pack once cooled.
