Slow-simmered bone-in chicken releases rich, savoury depth into a thick, flavour-packed broth. Vegetables add texture and freshness, creating a bowl that’s hearty and satisfying. This protein-rich rich warming chicken soup for winter fuels and warms in every spoon.
300 g chicken (with bone preferred) 1 tbsp oil or butter 1 finely chopped onion 4 crushed garlic cloves 1 chopped carrot ½ cup beans or celery Salt to taste Black pepper ½ tsp ginger paste 4 cups water or chicken stock
Heat oil or butter in a deep pot and sauté the onion until soft and translucent.
Add garlic and ginger, cooking until fragrant.
Add chicken pieces and cook briefly until lightly sealed.
Add vegetables, salt and pepper, then pour in water or stock.
Bring to a boil, reduce the heat and simmer until the chicken is tender and flavours develop.
