Sattu Parantha is more than just a stuffed flatbread. It's packed with the earthly goodness of roasted gram flour, aromatic spices and fresh herbs, making it a powerhouse of flavour and nutrition.
For the Dough: 1 cup whole wheat flour 1/2 tsp salt Water (as needed) For the Filling: 1 cup sattu 1/2 tsp ajwain 1/2 tsp cumin powder 1/2 tsp red chilli powder 1/4 tsp garam masala 1 tbsp finely chopped cilantro 1 tbsp finely chopped onion, optional 1 tbsp mustard oil or ghee Salt to taste Water as required
Knead dough with a pinch of salt and let it rest for 15 minutes
Mix the sattu with ajwain, cumin powder, chilli powder, garam masala, salt, mustard oil, and a little water to make a moist mixture.
Form the mixture into small dough balls and gently roll into flat parathas.
Roast the paratha on a hot tawa until it turns golden brown on both sides whilst brushing it with ghee/oil.
Serve with pickle, yoghurt or chutney!
