Intense heat and humidity call for something that feels refreshing, but not full of refined sugar. This creamy mango lassi blends seasonal mangoes with Greek yoghurt, cottage cheese, and chia seeds, making it a drink that keeps you full for longer and can be made in minutes.
2 ripe mangoes, peeled and chopped 1½ cups Greek yoghurt ¼ cup cottage cheese (paneer), crumbled ½ cup chilled milk 1 tbsp chia seeds 2 tbsp honey (optional) ¼ tsp cardamom powder 5–6 ice cubes 1 tsp chopped pistachios (for garnish) Few saffron strands (optional)
Peel the ripe mangoes and chop them into small cubes. Picking ripe mangoes reduces the need for extra sugar.
To a blender, add mangoes, Greek yoghurt, cottage cheese, chilled milk and chia seeds. Blend until smooth, so no fruit pieces remain.
If the prepared lassi feels too thick, you can add a little more chilled milk. Blend it again briefly until you reach the desired consistency.
Now, add the ice cubes and blend again for another 15 to 20 seconds to get a frothy drink.
Taste before serving. If you like some extra sweetness, add a little extra honey, depending on how naturally sweet the mangoes are.
Pour the prepared mango lassi into chilled glasses. Garnish it with chopped pistachios and saffron strands and serve instantly.
