Fluffy cheesy egg bites loaded with vegetables deliver soft texture, rich savoury flavours, and protein-packed goodness, making them a quick breakfast option that feels light, filling, and perfect for hectic weekday mornings.
4 eggs 1/4 cup milk 1/2 cup grated cheese 1/4 cup chopped capsicum 1/4 cup chopped onion 1 tbsp butter 1/2 tsp salt 1/4 tsp black pepper
Preheat the oven to 180°C and grease muffin moulds lightly with butter.
Whisk eggs, milk, salt, and black pepper until the mixture turns airy.
Fold chopped vegetables and grated cheese evenly into the egg mixture.
Pour the mixture into moulds, filling each one almost to the top.
Bake for 15 to 18 minutes until the egg bites turn fluffy and lightly golden.
