This festive season, skip the refined sugar without having to give up on the festive indulgence. This protein-rich mawa seeds barfi blends khoya, mixed seeds, nuts, and dates to give it a natural hint of sweetness, making it a wholesome homemade delicacy for celebrations or even to satisfy everyday sweet cravings.
1 cup low-fat mawa (khoya) ¼ cup pumpkin seeds ¼ cup sunflower seeds 2 tbsp flaxseeds 2 tbsp chia seeds ¼ cup almonds, chopped ¼ cup pistachios, chopped 10–12 soft dates, deseeded and blended into a paste 2 tbsp unsweetened almond powder ½ tsp cardamom powder 1 tsp ghee 1 tbsp melon seeds (optional) Edible rose petals or chopped pistachios for garnish (optional)
In a pan, dry roast pumpkin, sunflower, flax, chia, and melon seeds on low flame for about 3 to 4 minutes until they turn fragrant.
In another heavy-bottomed pan, heat ghee and add the crumbled mawa to it. Cook it gently for about 4 to 5 minutes, stirring constantly, until it is smooth and aromatic.
To this, mix in the date paste, almond powder, and some cardamom. Cook this mixture for about 2 to 3 minutes until you see that the mixture condenses and gets blended evenly.
Now, add the roasted seeds, chopped almonds, and pistachios to this. Mix everything thoroughly so that every bite is filled with crunch, flavour, and the goodness of seeds.
Transfer the prepared mixture to a greased tray and flatten it evenly. Garnish it with chopped pistachios, let it rest for 1–2 hours, then cut into neat square pieces.
