No dahi vada is complete without its tangy-sweet chutneys! This recipe combines tamarind and green chutneys that perfectly balance the creamy curd, giving every bite a burst of spicy, sweet, and refreshing flavour.
For Tamarind Chutney: ½ cup tamarind pulp ½ cup sugar 1 tsp cumin powder ½ tsp red chilli powder Salt to taste For Green Chutney: 1 cup coriander leaves ½ cup mint leaves 2 green chillies ½ inch ginger 1 tbsp lemon juice Salt to taste
Combine tamarind pulp, jaggery, and ½ cup water in a pan; cook until it thickens.
Stir in cumin powder, red chilli powder, and salt, then let it cool and set aside.
Grind coriander, mint, green chillies, ginger, lemon juice, and salt with a little water into a smooth paste.
Add a splash of water to both chutneys if too thick.
Drizzle both chutneys over vadas topped with curd, then sprinkle cumin powder and coriander leaves.
