Apple halwa is a fragrant and comforting Indian dessert that transforms crisp autumn apples into a rich, caramelised sweet. Sautéed slowly in pure ghee until tender and infused with warm cardamom and cinnamon, this unique halwa offers a delightful twist on traditional carrot or moong dal puddings. Garnished with toasted nuts, it makes a luxurious dessert for festive gatherings or cozy family evenings.
 4 large tart apples, peeled, cored, and grated  3 tablespoons pure ghee  1/2 cup whole milk or khoya (milk solids)  1/3 cup sugar or jaggery (adjust to apple sweetness)  1/2 teaspoon cardamom powder  A pinch of cinnamon powder  2 tablespoons mixed chopped nuts (cashews and almonds)
Heat pure ghee in a heavy-bottomed pan and lightly sauté the chopped nuts until golden, then remove and set aside.
Add the grated apples to the same pan and sauté over medium heat for eight to ten minutes until the natural juices evaporate and the apples soften completely.
Pour in the milk or add the crumbled khoya along with the sugar, stirring continuously as the mixture thickens and begins to leave the sides of the pan.
Stir in the cardamom powder, cinnamon powder, and toasted nuts, cooking for another two minutes before serving warm or chilled.
