Malai sandwich or malai chop, a popular Bengali sweet-dish delicacy prepared with milk, paneer, and khoya. This simple dessert recipe is popular on occasions such as Durga Puja and Rakshabandhan.
½ litre of milk 2 cups of sugar 3 cups water ½ tsp edible food colour 10 saffron strands 50gm khoya 1 citric acid
Dissolve the citric acid in water and set aside. Boil the milk, then reduce the heat.
Gradually add the citric acid solution until the milk curdles. Once greenish whey separates, turn off the heat.
Add 1 cup cold water, cover, and let sit for 15 minutes. Strain through a muslin towel, hang, and drain well. Squeeze off any extra whey.
Knead the chenna until soft and smooth. Shape into little squares. Cook the pieces in sugar syrup in a pressure cooker for 1 whistle.
Then let them simmer for 7 minutes. Let it cool. Soak in light syrup again.
Slice and fill with sweetened mawa, sandwich together, and sprinkle with saffron and serve!
