The weekend is here, and that means every meal needs an upgrade. For those who are craving something between a salad, a sandwich and a pizza, this pizza focaccia Caesar salad sandwich is what you need to make at home.
8 thin chicken cutlets 2tsp kosher salt 1 tsp black pepper 1 tsp garlic powder 1 cup all-purpose flour 4 eggs, beaten 1 cup Italian bread crumbs 1 cup grated parmesan Olive oil, for frying 4 anchovy fillets 2 garlic cloves 1 tsp dijon mustard Zest of 1 lemon 3 tbsp fresh lemon juice 1 tsp Worcestershire sauce
2 egg yolks 1 cup grated parmesan ½ cup olives 2 romaine hearts, finely shredded Crushed black pepper, as needed Homemade focaccia bread
Finely chop the anchovies and garlic until a paste forms. In a bowl, mix the paste, Dijon mustard, lemon zest, lemon juice, and egg yolk. Whisk until smooth.
Sprinkle in the olive oil until it is emulsified and creamy. Add the Worcestershire, parmesan and black pepper. Save a few tablespoons of dressing for the bread.
Season the chicken cutlets with salt, pepper, and garlic powder. Divide the flour, eggs, Italian seasoning and parmesan into three small dishes.
Dredge each cutlet in flour, then egg, and then parmesan-Italian mixture.
Heat oil in a large pan over medium heat. Fry the cutlets until golden brown. In a large mixing bowl, combine the shredded romaine with Caesar dressing, parmesan and black pepper.
The lettuce should be well-coated but not soggy. Spread a generous amount of Caesar dressing over the top and bottom of each slice.
Arrange the crispy chicken cutlets on the bottom slice. Top with a generous portion of Caesar salad, shaved parmesan, freshly cracked black pepper, and lemon zest.
