Pineapple pachadi is a Kerala-style dish that blends the sweetness of pineapple with a tangy and spiced yoghurt base. It is usually part of a festive sadya meal and offers a refreshing balance of flavours.
1 cup pineapple pieces (fresh, chopped) ½ cup curd (whisked) 2 tbsp grated coconut 2 green chillies ½ tsp mustard seeds 1 dried red chilli 1 sprig curry leaves 1 tbsp coconut oil Salt to taste
Cook pineapple pieces with a little water and salt until soft.
Grind grated coconut with green chillies and a pinch of mustard seeds into a smooth paste.
Mix the paste with whisked curd and add to the cooked pineapple.
Heat coconut oil, crackle mustard seeds, add dried red chilli and curry leaves, then pour over pachadi.
Serve chilled or at room temperature with rice.
