These hot and spicy, homemade restaurant-style peri peri chips are quite delicious. You can munch on them whenever you want!
2-3 wafer potatoes Oil, for deep-frying Homemade peri peri mix 2-3 tbsp coriander seeds 2 tsp cumin seeds 10-15 black pepper corns 2-3 bay leaves 4-5 dried red chillies 2 tsp dried garlic flakes 1 tsp dried oregano 1 tsp dried parsley 2-3 tsp onion powder Salt, to taste
Heat a nonstick skillet, then add the coriander seeds, cumin seeds, black peppercorns, bay leaves, and dried red chillies.
Mix and dry roast until aromatic. Let cool fully. Transfer the roasted ingredients into a grinder jar.
Add dried garlic flakes, dried oregano, dry parsley, salt, and onion powder, and ground till fine powder.
Thinly slice the potatoes and place them straight in water. Drain, then arrange in a single layer on a kitchen towel.
Place another kitchen towel on top and pat dry. Heat enough oil in a kadai, then add the potato slices a couple at a time.
Deep-fry until crispy. While the chips are still hot, drain them into a basin and add the homemade peri peri mix. Give it a few tosses.
Allow to cool fully before transferring to a serving bowl and serving, or storing in an airtight container.
