Churros are the ultimate street food indulgence, beloved for their star-shaped ridges that catch every grain of cinnamon sugar. Achieving the perfect churro at home is all about the "choux" pastry—a simple dough cooked on the stovetop to ensure a light, airy interior and a shatteringly crisp exterior. When fried to a deep golden brown and served with a side of thick chocolate ganache, these homemade treats offer a nostalgic warmth that store-bought versions simply can't match.

Ingredients

1 cup all-purpose flour 1 cup water 2 tablespoons unsalted butter 1 tablespoon granulated sugar (plus 1/2 cup for coating) 1/2 teaspoon salt 1 teaspoon ground cinnamon Vegetable oil for frying

Step 1

In a saucepan, bring water, butter, sugar, and salt to a boil.

Step 2

Remove from heat, add the flour all at once, and stir vigorously until a smooth ball of dough forms.

Step 3

Transfer the dough to a piping bag fitted with a large star tip.

Step 4

Heat oil in a deep pan to 180°C. Pipe 4-inch strips of dough directly into the oil, cutting with scissors.

Step 5

Fry until golden brown (about 2 minutes per side), drain on paper towels, and immediately toss in the cinnamon-sugar mixture.
