Peanut chutney is a protein-rich condiment that can accompany fried or spicy snacks. From idli to mingode (fritters), it adds a nutty flavour and completes the meals. You can also enjoy it with poha (it tastes heavenly!). Try this recipe.
½ cup peanuts 1 tbsp oil 2-3 green chillies Water as needed Salt to taste 1 tbsp lemon juice ½ inch ginger 2 garlic cloves ½ cup mint ½ tsp cumin seeds
Dry roast the peanuts in a pan. When the ground nuts are about to be done, add cumin seeds.
Remove the skin of the peanuts and add them to the grinder.
Add lemon juice, ginger, garlic, oil, and green chillies to the processor.
After grinding it into a coarse blend, add mint leaves, salt, and some water.
Run the mixer again, and you will have a smooth blend.
Serve the peanut chutney as is or temper it with curry leaves and mustard seeds.
