Peanut chikki is a classic Indian winter sweet made by coating roasted peanuts with hot jaggery syrup. The flavour depends on getting the jaggery to the right hard-ball stage so the chikki sets crisp and clean. It’s simple, warm and packed with childhood nostalgia.
1 cup roasted peanuts (skin removed, halved if large) ¾ cup jaggery 1 tsp ghee
Heat jaggery with 1–2 tbsp water until it melts, then cook on low until it reaches hard-ball stage.
Add ghee, stir quickly and mix in the roasted peanuts so they coat evenly.
Transfer the mixture onto a greased plate or steel surface and flatten with a greased rolling pin.
Cut into squares while still warm, then let it cool completely to turn crisp.
