Pav Bhaji is a famous Mumbai street food of spicy mashed vegetables cooked with butter and pav bhaji masala, served with butter-toasted bread rolls, lemon, and onions.
8 pav buns 4 tbsp butter 2 finely chopped onions 3 chopped tomatoes 1 chopped capsicum 3 boiled and mashed potatoes ½ cup boiled green peas ½ cup boiled & mashed cauliflower 1 tbsp ginger-garlic paste 2 tbsp pav bhaji masala 1 tsp red chilli powder ½ tsp turmeric powder 1 lemon Salt to taste Fresh coriander, for garnish
Heat 2 tbsp butter in a pan, sauté onions till golden.
Add ginger-garlic paste, cook for 1 minute.
Add tomatoes, cook till soft.
Mix in capsicum, boiled vegetables, pav bhaji masala, red chilli powder, turmeric, and salt.
Mash everything well, add 1 cup of water, and simmer 5-7 minutes.
Toast the pav with remaining butter on a tawa.
Serve hot with lemon wedges and coriander.
