Parsi Akuri is a traditional scrambled egg recipe featuring a creamy texture and spicy twist. Here, the eggs are cracked directly into the spices and sauteed veggies. Traditionally enjoyed with soft bread, this is an ideal breakfast option. Here’s the Parsi recipe to try at home.
4 eggs ½ diced onion 2-3 tbsp butter 1 tbsp ginger garlic paste 1-2 finely diced tomatoes 2-3 chopped green chillies ¼ tsp turmeric powder ¼ tsp coriander powder ¼ tsp cumin powder ½ tsp chilli powder salt to taste
Crack eggs in a large bowl and whisk well until a smooth consistency is achieved.
Heat some butter in a pan. Next, add onion, ginger, garlic paste, and tomatoes. Cook for a few minutes before adding green chillies and spices.
Mash the tomatoes gently with the onions and spices.
Add some water and let the mixture cook for 4-5 minutes, until the spices have fully infused the flavours. Add some fresh coriander.
Now, pour in the whisked eggs slowly. Keep stirring continuously while adding them.
Stir the eggs gently over low heat until soft and scrambled. Avoid overcooking, as that ruins the creamy consistency of a Parsi Akuri.
