A perfectly balanced wrap is all about texture and flavour contrast. This paneer version features marinated, pan-seared cubes of cottage cheese tossed in a tangy masala, wrapped in a soft whole wheat base with crisp vegetables and a cooling yogurt spread. It is the perfect solution for a busy day when you need something substantial that does not leave you feeling heavy or lethargic.
100g paneer, cubed and marinated in turmeric and chilli powder  1 whole wheat flatbread or tortilla  1/2 cup thinly sliced onions, capsicum, and carrots  2 tbsp thick Greek yogurt mixed with a pinch of black salt  1 tsp green chutney
Pan-sear the marinated paneer cubes in a non-stick skillet over medium-high heat until golden brown on all sides.
Warm the flatbread on the same skillet for 30 seconds until pliable.
Spread the yogurt mixture and green chutney onto the centre of the bread, then layer with the seared paneer and fresh vegetable slices.
Roll the wrap tightly, tucking in the ends to secure the filling, and slice it in half for an easy, portable meal.
