The paneer blanket momo flips the traditional dumpling structure inside out by using the wrapper as a drape over a sizzling filling. Mixing crumbled paneer with minced soya chunks creates a hearty and high protein mash that absorbs the savoury notes of soy sauce and fresh ginger beautifully. Searing these flavourful balls directly in the pan builds a rich crust before they are covered with a thin dough wrapper and steamed to completion. Finished with a generous drizzle of spicy chilli oil, this technique delivers all the comforting elements of a momo in an entirely new format.

Ingredients

 1 cup paneer, finely crumbled  1/2 cup soya chunks, boiled, squeezed dry, and minced  1 small onion, finely chopped  2 spring onions, finely chopped  1 tablespoon ginger, freshly minced  1 tablespoon light soy sauce  2 tablespoons vegetable oil, divided  Salt to taste  12 round momo wrappers  2 tablespoons chilli oil for drizzling

Step 1

Combine the crumbled paneer, minced soya chunks, chopped onion, spring onions, ginger, soy sauce, salt, and one tablespoon of oil in a large bowl, mashing everything together until it forms a cohesive mixture.

Step 2

Divide the prepared mash into small, equal portions and shape them into firm, round balls using your hands.

Step 3

Heat the remaining tablespoon of oil in a wide, flat bottomed pan over medium heat and arrange the balls evenly across the surface, letting them cook for two minutes until the bottoms develop a light brown sear.

Step 4

Drape a single momo wrapper completely over each cooking ball in the pan like a blanket, pour two tablespoons of water onto the empty spaces in the pan, and immediately cover with a tight lid to steam for six to eight minutes.

Step 5

Remove the lid once the water has evaporated and serve the steaming covered balls directly from the pan with a generous drizzle of chilli oil over the top.
