Want to draw a clear line between vegetable pulao and biryani? This is the recipe you need. Adding paneer to the layered rice, you can make the one-pot biryani protein-rich and serve it with raita.
2 cups rice 250g paneer, cubed 1 onion, sliced 2 tomatoes, pureed Ginger-garlic paste Garam masala, coriander, cumin, red chilli powder to taste Curd for marination Coriander and mint for garnish Ghee for cooking
Marinate the paneer cubes in a mixture of curd and spices.
Sauté onions, add ginger-garlic paste, tomatoes, and all the go-to spices.
Cook rice separately. Layer cooked rice, paneer, and masala in a pot.
Seal and slow-cook on low heat till aromatic.
Garnish with coriander and mint. Serve with raita and chutney.
