A healthy, creamy soup made from blended spinach, garlic, and mild spices, Palak soup is rich in iron and antioxidants, it boosts immunity and digestion. This warm, comforting soup is light yet filling, making it a perfect choice for a healthy meal or appetiser.
2 cups fresh spinach leaves (palak) 1 onion 1 tomato 1-inch piece of ginger 2-3 garlic cloves 1 green chilli 1 tsp cumin seeds
1/2 tsp black pepper powder 1/4 tsp garam masala 1 tbsp ghee or oil 2 cups water or vegetable broth Fresh cream Lemon juice Salt
In a deep pan, heat the ghee or oil. Add cumin seeds and let them splutter. Add chopped ginger, garlic, and green chili, and sauté.
Add the chopped onion and sauté until translucent. Add the chopped tomato and cook until soft. Add the chopped spinach leaves and cook for 3-4 minutes.
Let the mixture cool slightly. Transfer it to a blender with some water and blend until smooth.
Pour the blended mixture back into the pan. Add the remaining water or vegetable broth, salt, black pepper, and garam masala. Simmer for 5-7 minutes.
Adjust salt, add lemon juice to taste, and serve hot. Garnish with a swirl of fresh cream if desired.
