Spinach is a staple winter vegetable. A great source of iron, palak can be incorporated into your diet with a creamy serving of palak paneer. To make the North Indian classic, follow this easy recipe.
1 bunch fresh spinach 1 onion, chopped 2 cloves garlic 1-inch piece ginger 1 tomato, chopped 1 green chilli 1/4 teaspoon haldi 1/2 teaspoon red chilli powder 1/2 teaspoon coriander powder 1/4 teaspoon cumin powder 1/4 teaspoon garam masala 1 tablespoon ghee Salt to taste 200g paneer Fresh cream for garnishing
Heat some ghee and add chopped onion. Sauté till translucent.
Add minced ginger and garlic. Stir in chopped tomatoes and green chilli.
Mix in all the spices and sauté till the tomatoes are soft.
Add the spinach and cook till the spinach wilts. Let the mixture cool and blend till smooth.
Heat some oil and add shallow-fried paneer cubes. Transfer to the spinach puree.
Let the sabzi cook and season with salt. Garnish with fresh cream and serve hot.
