Palak khichdi is a wholesome, one-pot dish made with rice, lentils, and spinach, flavoured with mild spices. Nutritious and easy to digest, it is perfect for a comforting meal, often served with ghee, papad, or yoghurt.
½ cup rice ¼ cup moong dal 2 cups washed & chopped spinach (palak) 1 chopped onion 1 chopped tomato 1 slit green chilli 1 tsp ginger-garlic paste 1 tbsp ghee or oil ½ tsp cumin seeds ¼ tsp turmeric powder ½ tsp coriander powder (optional) 3 cups water Salt to taste
Wash & soak rice and moong dal for 15 minutes.
Heat the ghee in a pressure cooker, add the cumin seeds, and let them crackle.
Add onion, green chilli, and ginger-garlic paste, sauté till onions turn soft.
Add tomato, turmeric, coriander powder, and cook till tomatoes soften.
Stir in chopped spinach and cook for 2 minutes.
Then, add rice, dal, water, salt and mix well.
Pressure cook for 3-4 whistles and serve hot with ghee, papad, or curd.
