Palak dhokla is not just a snack but a fusion of health and taste! This modern twist in the Gujarati dhokla brings the goodness of spinach into a soft, fluffy and flavourful treat.
1 cup gram flour 1 cup finely chopped or pureed spinach 1/4 cup semolina 1/2 cup yoghurt 1 tsp ginger-green chilli paste 1/2 tsp turmeric powder 1 tsp baking soda 1 tsp sugar Salt to taste 1/2 cup water For Tempering: 1 tbsp oil 1 tsp mustard seeds 1 tsp sesame seeds 5-6 curry leaves 2 slit green chillies
In a bowl, mix gram flour, semolina, spinach, yoghurt, ginger garlic paste, turmeric, sugar, salt, and gradually add water to make a thick batter.
Just before steaming, add baking soda and mix gently.
Pour the batter into a greased mould, steam for 15-20 minutes until cooked thoroughly.
Heat oil, add mustard seeds, sesame seeds, curry leaves, green chillies and pour the tempering over the dhokla.
Slice into pieces and serve with green chutney or ketchup.
