Craving for a satisfying Rajasthani meal that you can make at home? Make dal baati with this recipe that uses an oven for perfectly crisp baati, which you can pair with rich dal, making it a hearty and satisfying meal.
For Baati: 2 cups whole wheat flour ½ cup semolina (sooji) ½ cup ghee ½ tsp baking soda 1 tsp salt Water as needed For Dal: ½ cup toor dal ¼ cup moong dal ¼ cup chana dal 1 onion (chopped) 2 tomatoes (chopped) 1 tbsp ginger-garlic paste 1 tsp turmeric 1 tsp red chilli powder 1 tsp cumin seeds 2 tbsp ghee Salt to taste Fresh coriander for garnish
In a bowl, add whole wheat flour, semolina, salt, baking soda, ghee, and water slowly to knead a stiff dough. Keep it at rest for about 10 to 15 minutes.
Divide the dough into equal size and shape them to make round balls. Place them on a baking tray that you can line with parchment paper.
Preheat the oven to 200°C and bake the baatis for at least 25–30 minutes. Check and flip it halfway, until they turn golden brown and appear crisp from the outside.
In the meantime, thoroughly wash and pressure cook all the dals with turmeric and salt until they turn soft. Mash them a bit for a creamy texture.
In a pan, heat ghee and add cumin seeds, chopped onions, and ginger-garlic paste. Cook the masala until golden, then add tomatoes and spices and pour the cooked dal and let it simmer.
Once baatis are baked properly, crack open them from the middle and dip them in ghee. Serve hot with dal and enjoy this classic Rajasthani meal at home.
