Quinoa being the super millet, and khichdi being the go-to one-pot meal when you want to eat something light, quinoa khichdi checks all the boxes. For a quick and comforting meal, try this recipe.
1 cup quinoa 1 cup toor dal 1 onion 1 tablespoon ghee 1 inch piece ginger, grated 1 teaspoon cumin seeds 1 teaspoon turmeric powder 1/2 teaspoon red chilli powder Salt to taste Water as needed
Rinse quinoa and toor dal. Heat some ghee in a pressure cooker and add cumin seeds.
Once they splutter, add onion and ginger. Stir in turmeric, red chilli powder, and salt.
Add quinoa, dal, and water, covering 2 inches of the cooker. Pressure cook for 20 minutes.
Turn off the heat and let the cooker release. Garnish with ghee and serve hot.
