Fresh spinach leaves are pureed with aromatic garlic, ginger, and cumin seeds to create a flavourful green base. Ingredients

1 cup basmati rice, washed and soaked for thirty minutes  2 cups tightly packed fresh spinach leaves  1 large onion, finely sliced  3 cloves garlic and a tiny piece of ginger, crushed  1 tsp cumin seeds and salt to taste  2 tbsp vegetable oil or ghee

Step 1

Blanch the fresh spinach leaves in boiling water for one minute, then plunge them into cold water and blend into a smooth green puree.

Step 2

eat the oil or ghee in a heavy bottomed pan and fry the cumin seeds, sliced onions, crushed garlic, and ginger until they turn a light golden colour.

Step 3

Drain the soaked basmati rice and stir it into the aromatic onion mixture, then pour in the spinach puree along with one cup of water and a generous pinch of salt.

Step 4

Cover the pan with a tight lid and let the rice simmer gently over low heat for fifteen minutes until all the liquid is absorbed and the grains are fluffy.
