Whether you’re allergic to gluten or shifting to a millet-forward diet, millet pulao is an impeccable recipe to make a quick lunch or dinner. With this one-pot recipe, you can prepare your meal in under 20 minutes.
1 cup mixed millets 1 onion 1 tomato 1 green chilli 1 inch ginger 2 cloves garlic 1 teaspoon cumin seeds 1 bay leaf 2 green cardamoms 1 cinnamon stick 1 teaspoon garam masala 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 cup coriander leaves Salt to taste 2 tablespoons oil Mixed vegetables as required
Rinse the mixed millet and soak for half an hour. Drain and keep aside.
Heat some oil and saute cumin seeds, bay leaf, green cardamom, and cinnamon stick.
Add chopped onion, ginger and garlic. Mix in tomatoes and cook until soft.
Stir in turmeric powder, red chilli powder, and garam masala.
Add vegetables like peas, carrots, and cauliflower. Pour some water and boil.
Add the millets and let the mixture simmer. Garnish with coriander leaves and serve.
