When you want something rich but a quick dinner option on a hectic weekday, malai paneer is a wonderful option. This creamy dish is prepared by mixing soft paneer with light spices and fresh cream, making a satisfying curry that you can pair with roti or rice.
200 g paneer cubes 1 tbsp butter 1 tbsp oil ½ cup fresh cream ½ cup milk 1 small onion, finely chopped 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp coriander powder ½ tsp garam masala ½ tsp salt 1 tbsp chopped coriander leaves
In a pan, heat butter and oil, and add finely chopped onion to it. Sauté the onions until they turn soft and lightly golden.
Add in ginger garlic paste to this and cook until the raw smell fades away, and you get an aromatic fragrance. Then add turmeric, coriander powder, and salt to this base and mix.
Pour in the half cup of milk and simmer gently on a low flame to make a smooth, lightly spiced base for the gravy.
Add the paneer cubes to the gravy and cook for another 2–3 minutes so that the paneer can soak up the creamy flavours.
Mix in ½ cup fresh cream and sprinkle garam masala on top. Cook for another 5 to 10 minutes or until the gravy thickens slightly.
Switch off the flame, garnish with chopped coriander and serve warm with roti or steamed rice for a hearty weekday dinner.
