For those who often find themselves struggling to pleat dumpling wrappers while making them at home, this easy variation delivers the flavours and texture of a classic dumpling without the hassle. Recreate this using nothing but a bowl, some simple ingredients and curl up on the couch to enjoy on a cold night.
½ cup all-purpose flour 1 tablespoon cornstarch 5 tablespoons boiling water ½ teaspoon salt
200 grams minced chicken ½-inch piece grated ginger 3-4 cloves garlic, chopped 2 spring onions, chopped 1 teaspoon soy sauce 1 teaspoon vinegar ½ teaspoon white pepper 1 teaspoon sugar 1 teaspoon cornstarch 2 pinches sesame seeds, for garnish Chilli oil, for garnish
Add the flour, cornstarch and salt to a dish and knead using boiling water to form a soft ball.
Cover it with a damp cloth and rest for 15-20 minutes while combining all the ingredients for the filling except the garnishes in a separate vessel.
Roll out the dough into a thin sheet and cut into discs that fit the cooking + serving bowl.
Scoop the chicken filling into the base of the bowl and cover it with a single disc of dough and repeat the process once again before placing it in the steamer.
Steam the one-pot dumpling for 12-15 minutes and garnish with sesame seeds and chilli oil before serving hot.
