1 tsp mustard seeds 2 tbsp coconut oil ½ tsp cumin seeds 3 grated beetroots 7-8 curry leaves 2 sliced green chillies ½ tsp turmeric, garam masala ½ tsp coriander, chilli powder Salt as needed ⅓ cup grated coconut 1 tsp grated ginger 4-5 pearl onions
Grate beetroots and quickly slice pearl onions.
Heat oil in a kadhai and let cumin and mustard seeds splutter.
Add green chillies, turmeric powder, onions, and beetroots.
Let the vegetables soften and add spice powders.
Once the ingredients are done, add grated coconut and salt to taste.
Garnish with a tablespoon of coconut and serve.
