Odia dalma is a lentil and vegetable-based curry that not only tastes delicious but also adds nutritional value to the plate. Pair it with roti or rice, and you can enjoy a satisfying meal over weekends.
1 banana, bay leaf 3 cups toor dal 1 tsp turmeric, chilli powder 2-3 cups water 2 brinjals Salt to taste 1 tomato, drumstick 1 tbsp coriander leaves 1 onion, potato 10-12 beans ½ cup pumpkin 2 tbsp mustard oil 1 tbsp panch phoron 1 tsp cumin seeds
With salt, turmeric, and a tablespoon of mustard oil, cook soaked toor dal for two whistles.
Heat the remaining oil in a pan, add cumin seeds, turmeric powder, and vegetables.
When the vegetables are half-cooked, sprinkle the remaining powdered spices and cooked lentils.
Add salt to taste and water to balance the notes and achieve the right consistency.
Let the ingredients simmer in the pot for 10 minutes.
Garnish Odia dalma with coriander leaves and serve.
