Oats idli is a healthy, wholesome twist on the traditional South Indian dish. Made with oats and semolina, it’s light, fluffy, and packed with nutrients. Perfect for breakfast or a snack, it pairs wonderfully with chutney or sambar.
1 cup oats (rolled or instant) 1/2 cup semolina (rava) 1 cup curd 1/2 cup water (adjust as needed) 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1-2 green chillies 1/2 inch ginger A few curry leaves 1/4 cup grated carrots 1/4 cup chopped coriander leaves 1/4 tsp baking soda or 1 tsp eno fruit salt Salt 1 tbsp oil
Dry roast the oats in a pan until aromatic. Allow them to cool and then grind into a fine powder.
In a bowl, mix the oats powder, semolina, curd, and water to form a thick batter. Let it rest for 10-15 minutes.
Heat oil in a pan, add mustard seeds, cumin seeds, green chilies, ginger, and curry leaves. Sauté briefly and add this tempering to the batter.
Mix in grated carrots, coriander leaves, and salt. Adjust the consistency of the batter with water if needed.
Just before steaming, add baking soda or eno fruit salt. Mix gently and quickly. Grease idli moulds and pour the batter into them.
