From vada to pakoras, peanut chutney complements fried snacks like no other dip. Its nutty texture and notes cut the stickiness and make the snacks taste better.
1 small garlic clove ½ cup raw peanuts 1.5 tsp oil ½ tsp cumin seeds ¼ tsp salt ¾ cup water 1 broken red chilli A pinch of hing 7-8 curry leaves 1 crushed garlic ¼ tsp mustard seeds
Heat a pan and dry roast peanuts, green chillies, and garlic.
Set the mixture aside to cool off.
Grind the ingredients along with cumin seeds into a smooth paste.
Pour the chutney into a jar.
Temper the peanut chutney with red chilli, hing, mustard seeds, and crushed garlic.
