Coconut rice is a comforting, lightweight, and nutritious dish that you can savour throughout the year, especially during summer when you feel like not eating much. It pairs well with kurma, avial, kadhi, and more. Check out the recipe!
1.5 cups grated coconut 1 cup uncooked rice 2 tbsp oil Salt to taste 1 dried red chilli A pinch of hing 8-10 cashews 1 tsp ginger ½ tbsp ural dal 1 tbsp chana dal ½ tsp mustard, cumin seeds
Wash rice and soak for at least 20-30 minutes.
Pressure cook the grains for at least 2 whistles.
While rice cools off, heat oil in a pan and roast cumin seeds, mustard seeds, urad dal, chana dal, and red chillies.
Add green slit chillies, ginger, hing, coconut, and curry leaves.
When the coconut slivers release the aroma, add rice, and toss the grains.
Top the dish with roasted cashews and enjoy.
