Mushroom soup is a classic creamy appetiser that is both comforting and satisfying. To enjoy a nutrient-rich and warm bowl of soup, you can quickly make it at home with this recipe.
1 tablespoon olive oil 1 onion 2 cloves garlic 500g mushrooms 4 cups vegetable broth 1/2 cup milk 1/4 teaspoon dried thyme Salt and pepper to taste Chopped parsley for garnish
Heat the olive oil and saute chopped onion. Stir in garlic and cook till fragrant.
Slice mushrooms and cook till they start to brown. Pour vegetable broth and bring it to a boil.
Add dried thyme, salt, and pepper. Simmer till the flavours meld.
Stir in milk and simmer for a few more minutes. Blend if you want a creamier soup.
Pour the soup into bowls, garnish with chopped parsley, and serve.
