Nutty millet vermicelli tossed with aromatic spices makes a quick, flavour-packed meal that feels light yet filling. Perfect for busy days when you want something wholesome without spending hours in the kitchen.
2 cups millet vermicelli 1 tbsp oil 1 tsp mustard seeds 1 chopped onion 1 chopped tomato 2 slit green chillies 8-10 curry leaves ½ tsp turmeric powder Salt to taste 2 cups water 2 tbsp chopped coriander leaves 1 tbsp lemon juice
Dry roast millet vermicelli in a pan until lightly golden; keep aside.
Heat oil, add mustard seeds and let them splutter, then add curry leaves and green chillies.
Add the onion and sauté until soft; then mix in the tomatoes, turmeric, and salt.
Pour water and bring to a boil, then add roasted vermicelli and cook covered till tender.
Finish with lemon juice and coriander; fluff gently before serving hot.
