Carrot milk, often enjoyed as a warm "Gajar Doodh," is a comforting, nutrient-dense beverage that bridges the gap between a snack and a wellness elixir. Rich in Beta-carotene and Vitamin A, this vibrant drink is traditionally served in Indian households during the cooler months to boost immunity and skin health. By gently simmering grated carrots in milk, you release their natural sugars, resulting in a creamy, earthy sweetness that feels indulgent yet entirely wholesome.

Ingredients

2 medium carrots, finely grated 2 cups full-fat milk (or oat milk for a vegan twist) 1–2 tablespoons honey or maple syrup 1/2 teaspoon cardamom powder A handful of slivered almonds and pistachios A pinch of saffron (optional)

Step 1

Place the grated carrots and milk in a heavy-bottomed saucepan over medium heat.

Step 2

Simmer for 10–15 minutes, stirring occasionally, until the carrots are soft and the milk has slightly thickened.

Step 3

Stir in the cardamom powder, saffron, and your chosen sweetener.

Step 4

Continue to cook for another 2 minutes until the flavors are well integrated.

Step 5

Pour into mugs and garnish generously with slivered nuts; serve warm or chilled.
