Meethe chawal, or saffron rice, is a classic North Indian dish that beautifully blends soft rice, the sweetness of sugar, and the richness of nuts. To make yourself an indulgent meal, try this 6-step recipe.
1.5 cups soaked rice 2.5 tablespoons ghee 1.5 cups sugar 1 cup chopped dry fruits 4 green cardamom 4 cloves 1 cinnamon stick Pinch of saffron Pinch of salt
Boil the soaked rice in water, salt, and 2-3 green cardamoms.
In a separate pan, add some ghee and cinnamon and heat till they sputter.
Once aromatic, add rice, saffron, and chopped nuts like almonds, cashews, and raisins.
After everything is mixed, add sugar and cook till it is caramelised.
Keep stirring to coat the rice with sugar syrup. Garnish with nuts and serve hot.
