Winters in Bengal are incomplete without nolen gur, and its many desserts. Nolen gur roshogolla, also known as date palm jaggery roshogolla, is a traditional Bengali sweet made with chenna balls cooked in a syrup made with date palm jaggery. It has a soft and spongy texture with a unique caramel-like flavour.
Water, as needed 500 grams of nolen gur or date palm jaggery 200 grams of chenna or cottage cheese A few drops of rose water ½ teaspoon of cardamom powder
In a large, heavy-bottomed pot, pour in water and nolen gur.
Turn it into a thick syrup. Reduce the heat to low.
Next, knead the chenna until it is soft and smooth. Divide it into small balls.
Increase the heat to full flame and let the syrup boil. Add in the chenna balls.
Cook it for 15-20 minutes. Switch off the heat. Let it cool.
Serve nolen gur roshogollas to family and friends.
