This oil-light hummus without tahini is the perfect solution to your everyday snacks if you have little time on your hands on weekday mornings. Blend it in just five minutes and enjoy it as a refreshing dip, spread, or healthy snack.

Ingredients

2 cups boiled chickpeas 3 tbsp thick curd (or Greek yoghurt) 2 tbsp extra virgin olive oil 2 garlic cloves 2 tbsp lemon juice ½ tsp roasted cumin powder ½ tsp black pepper Salt to taste 2–3 tbsp chilled water (as needed)

Step 1

Boil the chickpeas, let them cool down and then blend them. Reserve a few for garnish later on.

Step 2

To the blender, along with chickpeas, add curd, garlic, lemon juice, olive oil, cumin powder, pepper, salt and blend to make a smooth mixture.

Step 3

Pour some chilled water slowly while blending. Continue to blend it until the hummus turns creamy, silky, and easy to spread.

Step 4

Taste and adjust the seasoning as per requirement. Add some extra lemon juice for brightness or cumin if you like a deep, earthy taste.

Step 5

Transfer the prepared hummus to a serving bowl. Drizzle some olive oil, garnish with the chickpeas that you reserved, and some paprika.

Step 6

Transfer it to a glass jar and enjoy with pita bread, vegetable sticks, crackers and spreads for sandwiches, rolls, etc.
