No oven? No problem. This eggless Christmas cake prepared in a pressure cooker is soft, spiced, and full of festive flavours. This cake is perfect for last-minute baking, even if you don't have an oven.
1½ cups all-purpose flour (maida) ¾ cup powdered sugar ½ cup milk ¼ cup oil ½ cup thick curd 1 tsp baking powder ½ tsp baking soda 1 tsp cinnamon powder ½ tsp mixed spice or nutmeg 1 tsp vanilla essence ¼ cup chopped nuts & raisins 2 tbsp orange juice or milk (optional)
Preheat the pressure cooker on low heat for about 10 minutes with some salt at the base. Remove the whistle and gasket to ensure safe baking.
In a bowl, whisk some powdered sugar, curd, oil, milk, and vanilla until it turns smooth, glossy, and lump-free mixture.
Sift some flour, baking powder, baking soda, cinnamon, and mixed spice. Gently add it to the wet mixture to make a thick, smooth batter.
Add in some chopped nuts and raisins. Add some orange juice or milk if the batter feels a bit thick.
Pour the batter into a greased cake tin. Tap gently and place on the stand inside the cooker. Cover with a lid.
Cook on low flame for 40–45 minutes. Check by inserting a toothpick to see if it's done. Let it cool completely, then slice and serve.
