Many people abstain from eating onions and garlic during Navratri, but that should not mean you need to give up your favourite breakfast. Here is a recipe that you will continue replicating long after Navratri has culminated.
4 cups of poha Salt to taste 1 slit green chilli 1 tsp mustard seeds 1 tsp turmeric powder ½ tsp chilli powder ½ cup cabbage 1 tbsp oil 1 potato ½ cup carrots 1 tbsp coriander leaves ½ tbsp lemon juice
Heat oil in a kadhai and add mustard seeds, turmeric powder, and green chilli.
Add finely chopped potatoes and wait for the slices to soften.
Add cabbage and carrots. Sprinkle red chilli powder and salt, and cook with a lid on.
Once veggies are done, add water-drained poha. Toss, add a dash of water, and cook on the lid again.
Sprinkle salt and cook for a couple of minutes.
Once poha is ready, sprinkle coriander leaves and add lemon juice. Serve!
