A creamy macaroni salad does not always need to have mayonnaise in it. To give it a healthier twist, blend in thick hung curd that adds richness, freshness, and also some extra protein, making this salad a delectable option to have as an everyday meal or also for a quick office lunch option.
2 cups of macaroni, cooked 1 cup thick hung curd (Greek yoghurt works too) ½ cup sweet corn, boiled ½ cup cucumber, diced ½ cup carrot, finely chopped ¼ cup capsicum, diced ¼ cup onion, finely chopped (optional) 2 tbsp fresh coriander, chopped 1 tsp lemon juice ½ tsp black pepper powder ½ tsp roasted cumin powder Salt, to taste
Boil the macaroni with a pinch of salt until they turn soft but not mushy. Drain, rinse with cold water, and let it cool down thoroughly.
In a bowl, whisk the hung curd with some roasted cumin powder, black pepper, and salt to make a smooth and creamy mixture.
Mix the boiled macaroni with some sweet corn, chopped cucumber, carrot, capsicum, onion, and coriander.
Pour the prepared hung curd dressing over the macaroni and vegetables. Toss everything so that each piece gets covered with the dressing.
Keep the salad in the refrigerator for about 15 to 20 minutes. Garnish with fresh coriander and cracked black pepper and serve.
