These flourless chocolate chip cookies get their shape from creamy peanut butter and egg instead of flour. With brown sugar and chocolate chips in the mixture, they turn out perfectly golden, chewy, and a bit crisp around the edges.
1 cup creamy peanut butter 1 cup brown sugar 1 large egg 1 tsp baking soda ½ cup chocolate chips
In a bowl, add peanut butter, brown sugar, egg and baking soda. Mix everything well to get a smooth, sticky dough.
To the dough, gently add the chocolate chips. Save a few chips to add in the topping later on.
Scoop small portions of the prepared dough onto a lined baking tray. Leave enough space between each portion as they will spread while they get baked.
Bake these at 175°C for about 9 to 10 minutes until the edges appear to be set. Do not overbake, as they will firm up while they cool down.
Let the cookies rest for a few minutes so that they cool down thoroughly, and then store them in an airtight jar.
