Neer Dosa literally translates to "water dosa," referring to its incredibly thin, crepe-like consistency. This gluten-free delicacy requires no fermentation, making it a high-speed, healthy breakfast option. It is exceptionally light on the stomach and acts as a perfect sponge for savory chutneys or rich curries.
1 cup raw rice (soaked for 4-5 hours) 1/4 cup fresh grated coconut 2 to 2.5 cups water Salt to taste
Grind the soaked rice and grated coconut with a little water into an ultra-smooth, fine paste.
Transfer to a bowl and add the remaining water until the batter is thin and watery, similar to the consistency of milk. Add salt.
Heat a non-stick tawa and grease it lightly. Pour a ladle of batter from the outer edges toward the center (do not spread it).
Cover with a lid and steam-cook for 1 minute on medium-high heat. Do not flip; once the edges lift, fold it into a triangle and serve.
